Often ate at small diner in San Carlos, Sonora, MX. The owner's cook(wife) scaled down their salsa verde for me.
3 jalepenos seeded and cut up
5 tomatillos
1 avacado pealed
a bit of salt
maybe a little water
Pop all in the blender and wah la, instant salsa
I used one pablano pepper and one jalepeno to make a slightly cooler version. I think it makes about two cups and it really doesn't keep well for more than two days.

Re: San Carlos Green Salsa - from Ernie's Diner
Sun, April 13, 2008 - 6:48 PMThat sounds delicious, I love tomatillo salsa, but I've never put any avocado in it. I'll definitely be trying this out soon.
