2 C. ketchup
1.25 C. Coca-Cola, flat
3/4 C. Jack Daniels
1/2 C. Worchestershire sauce
6 T. A1 Sauce
2 t. liquid smoke
2 t. onion powder
2 t. garlic powder
1 t. cayenne pepper
1/2 t. rubbed sage
1/2 t. ground thyme
1 t. black pepper
Combine everything in a pot and simmer gently for 20 minutes until reduce by 1/4.
Makes 4 Cups. -

1 tsp oil
1-2 cloves garlic, chopped
1/2 medium onion, diced fine
1 bay leaf
2 cups ketchup
1 cup cider vinegar
3/4 cup brown sugar
2 Tbsp Worcestershire sauce
2 Tbsp grainy mustard
1 Tbsp chipotle Tabasco sauce, more or less to taste
1/2 tsp red pepper flakes, more or less to taste
1/2 tsp sage
1/2 tsp salt
heat oil, add garlic onion and bay leaf, sweat until onions are translucent.
add remaining ingredients, stirring frequently until it boils.
simmer 10 minutes with stirring and then cool to room temperature.
place in a quart jar and refrigerate.
i go a little heavier on the pepper.
mmmmm.

Thu, April 24, 2008 - 7:41 PMi commonly use two different barbecue sauces. One more traditional flavored, one with a bit more spice.
2 cups ketchup
3 tbsp soy sauce
1/4 brown sugar
2-3 tbsp molasses
2-3 tbsp mustard
1/3 cup pineapple juice
1 tbsp garlic or onion powder (fresh garlic is fine too, I just love the super smooth texture)
On chicken and ribs generally
1 large can tomato paste
juice of 2-3 limes
1/4 cup olive oil
2 tsp salt
2 tbsp ground cumin
2 tbsp. ground coriander
I like this one on just about everything, but I've never tried it on ribs before -

Fri, April 25, 2008 - 1:40 PMI'd have to kill you if I gave you my secret sauce recipe, but I'll share 2 of my not-so-secret ones:
Chili's Guava Glaze:
into a small saucepan, scoop out the flesh and seeds from a big sack of halved guavas. add 1 cup local honey, 1/2-1 cup of water, and 2-3 whole dried chipotle chiles. partially cover and simmer around a half hour to an hour, stirring often until thickened. strain and use on pork tenderloin or baby back ribs near the end of your grilling.
Chili's BBQ'd Oyster Cheater Sauce:
in a small saucepan, empty a bottle of your favorite Thai peanut chile sauce, a whole bottle of your favorite hot sauce (I use Tahiti Joe's Kamanawannakillya), 2 sticks of butter, and a whole head of garlic, minced. simmer for half an hour, stirring often. Grill your fresh raw oysters until they pop open, remove the upper shell, add a big spoon of this BBQ sauce on top of each oyster, cover the grill and smoke the oysters until they are bubbly and hot. YUM don't burn your mouth (or your ass ;o)

Fri, April 25, 2008 - 3:32 PMFor grilled oysters, I melt a stick of butter, add 2 minced cloves of garlic, 1/4 C. Key Lime juice, and teaspoon of chili powder.
Paint that on the oysters when they open, and eat 'em up. -

Mon, April 28, 2008 - 2:37 PMI'm lazy. My "sauce" is always some kind of thinned down preserve..... any sort of fruit will do on chicken or pork. Red meat doesn't need sauce.
