Hey all,
My neighbors just had their new baby yesterday and I'm looking for a casserole of sorts to take to them...something they can just pop in the oven or crockpot. Or would it be nice to send over a cake? I'm not sure what is best, I just know that when my sis-in-law had her baby she had about a hundred lasagnas. Help!

Sun, July 17, 2005 - 10:17 AMoh, a casserole, definately! i just picked up a 'big book of casseroles.' wish i could loan it to ya through the net! pick a type & i'll find a good recipe (or few) for ya: seafood, poultry, meat, vegetable, baked pastas, grain & legume, gratins, or low-fat casseroles.

Sun, July 17, 2005 - 10:20 AMHi Robin........I've made this several times to take to friends who have lost a loved one. When my dad passed away, we had tons of HAM!!! Anyway, this was a nice change, and it's made the night before and refrigerated. I'm posting the version for 4 people and then one changing it for 6 people. Oh, and I cheat on the chicken and buy the cans of all white breast meat ;) If you choose this, I would let your neighbor know that you're going to bring it and that way she'll know that all she has to do is turn on the oven!!
Make-Ahead Chicken Casserole
Category: Chopped Cooked Chicken
Serves/Makes: 4 | Difficulty Level: 2 | Ready In: > 5 hrs
Ingredients:
8 ounces Macaroni uncooked
1/2 pound Cheese Velveeta, cubed
4 Eggs, hard-boiled, chopped
1 can Cream of mushroom soup
2 cups Chicken, cooked, chopped
1 can Cream of chicken soup
2 cups Milk
Directions:
Mix all the ingredients together and refrigerate overnight. Be sure to cover.
Take out 1 hour before cooking. Bake 1 hour at 350.

Sun, July 17, 2005 - 10:26 AMInstead of a casserole when the couple may be flooded with perishable food, how about a package of other ready food and drink?
The last birth among my neighbors and friends was six years ago, and my then-partner and I prepared for the delivery by stocking bottled water, sodas, tea bags, single-serving coffees, chips, candy, frozen bagels and waffles, and peanut butter and jelly, etc for the expectant couple. They came home with an 8-pound boy one day, and we schlepped over about 150 pounds of groceries, giving us back full use of our pantry and freezer. -

Saute chopped mushrooms, onions, and zucchini in oil with garlic and basil and/oregano.
Combine with cooked rice, grated cheese (cheddar and/or Swiss and Parmesan), and enough sour cream to make it "gloopy."
Bake at 350 for 30 minutes, and if the top isn't browned, run it under a broiler for a few minutes.

Tortilla Casserole
from Sundays at Moosewood
1 medium onion, chopped ½ pint heavy cream
1 garlic clove, minced 1/3 c grated Parmesan
¾ t dried oregano s & p to taste
3 T veg oil 10 6” corn tortillas
3 medium tomatoes, chopped ½ c grated Monterey Jack cheese
in a large skillet, satue onion, garlic, and oregano in oil for 5-10 minutes, until onions are translucent. Stir in chopped tomatoes, cover, and simmer about 5 minutes, until the tomatoes are soft and juicy.
Cut tortillas into 1/2” wide strips and stir into the vegetable mixture with the cream, Parmesan, and s&p.
Bake, uncovered, at 375F in a buttered 1 qt. casserole for 30 min. Top with grated Mont'y Jack and return to oven until cheese is totally melted. -

Sun, July 17, 2005 - 8:01 PMI agree with RedHot on this: an opportunity to provide nutritious staples that will last a new family a few weeks compared to a cakey-treat that may only last a few days is preferable and appreciate. Certainly, any casserole that may meet the new family's preferances (such as whether they are vegan or carniverous) with some beverages and snacks added on will be a hit! -

Mon, July 18, 2005 - 9:58 AMAnother great gift, food-related (if not food itself) for a couple with a newborn is a cast iron pan.
Food cooked in cast iron pans provides an excellent source of dietary iron for young children--my wife, who used to be a public health mother/baby nurse, used to have a stash of them she'd hand out from time to time.
