Hey guys,
I'm looking for ideas for things to cook for stict vegans. I make a killer pasta sauce with lots of veggies but besides that I'm at a bit of a loss since I cant use cheese, milk, or obviously meat to cook for my friend.

Wed, April 30, 2008 - 3:01 PMMeals that center around legumes and grains...salads, add nuts and seeds...when I was vegan, my favorite cookbook was Vegan Vittles...Moosewood and Molly Katzen's cookbooks have lots of good vegetarian recipes, definitely a lot are vegan, or can be made to be...its been several years now since I introduced meat into my diet, so I am certainly not the best source, but I remember lots of tofu and tempeh, vegies, more tofu and tempeh...so many grains...and yet again, more tofu... -

I used 1 cup quinoa (I cooked it in a rice cooker) mixed with
2 chopped tomatoes
1/2 english cucumber chopped
3 large sprigs Italian parsley chopped, no stems
1/4 each red and yellow chopped bell peppers
To dress it I used lavender flowers, crushed chilis, salt, pepper, lemon juice, and olive oil. Aprox 3 Tablespoons each of the oil and juice, and aprox 1-1/2 teaspoons of each of the dry spices.
It dosn`t keep very well, so it should be eaten fresh, but it was so tasty that it pretty much all goes very quickly.

Thu, May 1, 2008 - 8:20 AMDon't forget nuts.... lots of good stuff in there and they'll help you keep your sanity amid all that tofu. If you're friend isn't offended by meat (ie they don't eat animal products but are OK with others who do) you could do what I used to do for my friend Rachael- a vegan- and her sweetie -definitely not one. I would prepare a fairly traditional meal that featured a big pot of beans where everything was vegan except the platter of lamb steaks that the rest of us had. The beans weren't "just for her" so she didn't feel at all left out and her sweetie felt honoured too because we'd made a special treat for him (the lamb.)
Here are some tips for adjusting regular recipes:
Vegan margerine exists. It isn't all crap.
Eggs can be substituted with 1 Tbsp soy flour + 1 Tbsp water per egg Baked goods won't suffer.
Soy milk or almond milk. They also make soy cream but I think the almond milk is a better substitute.
Soy cheese isn't great but it's ok inside stuff.
Olive oil.
There are now chocolate chips for vegans. Go for the high-coca ones. Bake cookies to share.
Think of the plate.... it should be 1/2 veggies, 1/4 starch and 1/4 protein in a meat meal anyway (when was the last time you saw that in a restaurant???) Most of any meal should be pretty easy to change when you think of the veg first.

Thu, May 1, 2008 - 9:55 AMmolly katzen's and some of the Moosewood books fulfill the myth that vegetarian food is grey , boring and unimaginative. Definitely the hippy 70's model that many of us are trying to avoid and move onwards from.
Are there particular styles of cooking you are looking for? Since you are in florida you have an incredible selection of tropical ingredients to play with

Thu, May 1, 2008 - 10:37 AMI eat meat, but I've had a few dinners made by vegetarians and one of my favorites (I'm not a fan of tofu and such) was eggplant parmesan. Of course, you couldn't use the cheese - unless you'd want to substitute it with a soy version - but it's a great and filling option. You could even use your own sauce for instead of the normal plain tomato sauce. -
