Heck, it even feels too hot to grill unless we wait really late to eat. I can only do so many salads. What are some of your "Indian Summer" favorites?
Heat hasn't been much of a problem in Seattle this year, but,,,
Hot weather dishes include:
Lots of salads - you mentioned this, but I don't know how varied your thinking is on salad. There are some wonderful Thai salads you might try...Yum Talay (Seafood Salad) or Yum Neua (Spicy Grilled Beef Salad).. Have a late grilled dinner one night and also do the grilling for the next night.
Then there's gazpacho or cold borscht and other cold soups.
There's hummus and bread. There's pickles (not just cucumber pickles, but pickled beets or zucchini or tomatillos...), there are a zillion cheeses out there. There's Cucumber Raita, and lots of other cold yoghurt dishes.
Lots of things to keep you cool!
Cucumber Salad- Cucs, Onion, Vinegar, tad of sugar, radishes (fyi the radishes bleed so it all ends up being a lovely pink)
Sangria - a fruit salad in every pitcher
One green apple,a cored lemon,lotsa kale,carrot,and assorted extras = a veggie lemonaide.
I spin it to a smoooothie!
nut pesto, yogurt sauces on pasta!
avocado, cucumber shrimp salad sandwiches
half avocados with salmon or a can of shrimp/tuna inside the half.
an assortment of good bread, cheese and olives alongside some fresh cherry tomatoes, figs and grapes, a bottle of wine or sparkling water.
