The regional thread made me think of this. I only had Fried Chicken and Waffles for the first time about 2 years ago. Fell in love with it right away.
Is it a across the board southern dish or from some place in particular? (yes I could google this, but thought it more fun to engage tribe instead)
I had the dish at a place here in Chicago called Kitsch-N. The breadking on the chicken has a nice spicyness to it that just plays so well with the maple syrup of the on the waffles. Like the name of the place suggest everything is rather kitsch and retro. They have a great dessert. Its simply The Twinkie. Except its a big homemade angel food cake, kind of cracked open and oozing a whipped banana cream filling.

Well I grew up in Virginia and I never heard of fried chicken with waffles until I moved to California. YMMV
I love chicken and waffles. Fried chicken with a dip in the maple syrup is so yum. I have no idea where it specifically started, I'm just glad someone put it together the first time.
oh and p.s. that twinkie dessert sounds so good! my go-to white trash dessert is twinkie strawberry shortcakes ssshhhh
